  • 2 ounces deli turkey

Greek Salad Mixture

  • 1 leaf lettuce (romaine works well)
  • 3-4 slices cucumber
  • 3-4 cherry tomatoes
  • 5-6 strips red onion
  • 3-4 kalamata olives
  • 3-4 banana pepper rings
  • 2 tablespoons feta cheese crumbles
  • 1.5 tablespoons Greek vinaigrette


Instructions

  1. Prepare the Lettuce: Chop the romaine lettuce leaf into thin shreds, or use pre-packaged shredded lettuce for convenience.
  2. Chop the Vegetables: Quarter the cherry tomatoes. Thinly slice the cucumber and cut the slices into quarters to create small triangular pieces. Thinly slice the red onion into strips.
  3. Slice Olives and Peppers: Slice 3-4 kalamata olives and chop 3-4 banana pepper rings into smaller pieces.
  4. Toss Salad Mixture: In a small bowl, combine all chopped veggies, olives, banana peppers, and 2 tablespoons of crumbled feta cheese. Drizzle 1.5 tablespoons of Greek vinaigrette over the mixture and toss gently to combine. Set aside.
  5. Spread Hummus: Lay the tortilla flat and spread 2 tablespoons of hummus evenly over its surface.
  6. Layer Turkey: Place 2 ounces of deli turkey over the hummus, keeping it centered to facilitate rolling.
  7. Add Salad Mixture: Evenly scoop the prepared salad mixture on top of the turkey, focusing the filling in the center of the tortilla.
  8. Roll and Serve: Carefully roll the tortilla up tightly and cut the wrap in half for serving.
