Description

These crispy and flavorful potato wedges are baked to perfection with a simple blend of garlic, onion powder, smoked paprika, and olive oil. Perfect as a side dish or snack, they come out tender inside and golden on the outside. Optionally topped with vegan parmesan for added flavor.

Ingredients

Scale

Main Ingredients

  • 4 russet potatoes
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced or 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • Optional: grated vegan parmesan, such as Violife brand

Instructions

  1. Preheat Oven: Preheat the oven to 425 degrees Fahrenheit and lightly grease a large baking pan with olive oil to prevent sticking.
  2. Prepare Potatoes: Scrub the potatoes clean under running water. On a cutting board, slice each potato in half lengthwise. Then cut each half into thirds or fourths lengthwise at an angle, depending on the potato size, to create wedge shapes.
  3. Season Potatoes: Place the sliced potato wedges and all remaining ingredients—olive oil, minced garlic (or garlic powder), onion powder, smoked paprika, and salt—into a large resealable bag or bowl. Seal the bag and shake well to coat all wedges evenly with the seasoning mixture.
  4. Arrange on Baking Sheet: Spread the coated potato wedges evenly in a single layer over the prepared baking sheet, ensuring they have space to crisp up.
  5. Bake: Bake the wedges in the oven for 35 minutes, flipping them once halfway through the cooking time to ensure even browning and crispiness.
  6. Check & Serve: When the wedges are golden brown on the outside and easily pierced with a fork, they are done. Remove from the oven and optionally sprinkle with grated vegan parmesan. Serve warm with ketchup or your favorite dipping sauce.

Notes

  • For extra crispiness, soak the potato wedges in cold water for 30 minutes before seasoning and drying them thoroughly.
  • You can substitute garlic powder if you don't have fresh garlic on hand.
  • To make this recipe in an air fryer, cook at 400 degrees Fahrenheit for about 20 minutes, shaking halfway through.
  • If you prefer, you can add other spices like cayenne pepper or dried herbs for a different flavor profile.
  • Use russet potatoes for the best texture and crispiness in baked wedges.
